Hearty Mediterranean Salad

This salad is hearty because it's packed with ingredients to keep you full, satisfied and provide that sweet and flavorful crunch that goes with a delicious Mediterranean salad! This dish would be delicious as a side or could be a meal on its own as it's loaded with protein, healthy fats, veggies and fiber. Check out the recipe below!

Salad Ingredients:
4 cups of lettuce (I use a blend of romaine & red lettuce)
1/2 red onion thinly sliced
1/2 block of feta cheese, cubed
1 can of chickpeas, drained
1 english cucumber, diced
1 package of sweet cherry tomatos, sliced
2-3 celery stalks, sliced
Dressing Ingredients:
1/2 cup of quality olive oil
2 tbs of balsamic
tbsp dried basil (or 2 tbsp fresh basil)
tbsp dried oregano
1 clove of minced garlic
1/4 tsp grainy mustard
1 tsp honey
juice of 1 large lemon
salt & pepper to taste

Instructions: combine salad ingredients in a large bowl and set aside. In a large jar or smaller bowl, whisk together the dressing ingredients. Once ready, pour over the salad mixture and gently toss. You can store the dressing in the fridge sealed air tight for a week. Perfect for Summer or your next BBQ, or anytime ;)!
